Aspen Saturday Mazket Demo Proposal for CCLC:
edibleASPEN will provide a full page ad in its summer (first week in June) and fall (last week in
August) issues, valued at $5000 total. The City of Aspen or CCLC will pay''/x of the price, ~~~( ,
payable in October 2008, after the completion of the Mazket's run.
edibleASPEN will organize 8 demos, to be held during the 1st 8 Saturdays of the Market's run
and will be responsible for scheduling chefs or businesses to present the demos and any staff we
think necessary to work the demo. With the exception of items listed below, we will provide all
supplies necessary including food, kitchen tools and cooking accessories including sample
cups/spoons, etc. edibleASPEN will pre-print and make available recipes and do our best to keep
these focused on ingredients that can be bought at the mazket. We will also in some cases try to
arrange "shopping with the chef' before a demo. We prefer that the demos be held somewhere
between 10:00 a.m. and 12:00 p.m. and last for approximately 1 hour, times will vary though.
edibleASPEN request's that the City of Aspen provides the following: Any necessary services,
permits or facilities not listed above. On a weekly basis we would like a tent to cover the demo
area, including the cooking area and the audience. Chairs (No. recommended?), three 8' tables
for prepping/cooking, power source/electricity, a sound system with two lapel or headset mic's,
grill and cook top, an easel with chalk board or dry erase board at entrance of tent, pazking space
or spaces at back of tent for easy loading/unloading. In addition, the city should maintain and
clean up the grass in the park area before set up.
We request that the City of Aspen name edibleASPEN as the sponsor of the demos in all
advertising including newspaper ads, banners, flyers, shopping bags, etc., during the 151 8 weeks
of the Market and after if we agree to organize additional demos. We ask that the City of Aspen
diligently promotes each weekly demo.
edibleASPEN currently has preliminary commitments from Chef Ryan Hardy (The Little Nell),
Chef Mark Fischer (Six89 and Phat Thai), Chef Jenn Riffle (The Whole Organic Chef) and
KiddieCookers (Children's cooking classes) to collaborate on demos. Once we know the exact
dates we will finalize commitments. We have also heard from Plum TV, they may have an
interest in airing the weekly demos. Again, once we know the exact dates, this can be pursued.
Food & Wine has also been contacted with regard to collaborating on the 151 weekend of the
Market.

Re: Assistant Market manager position for the Aspen Saturday Market
We have some issues with the performance this past year of the assistant market manager
and the direction she is plaq;,~ n taking the market in the future.

1-. It was our understanding that for the two consecutive Saturdays that the market
manager was planned in advance to be absent from the market during the last
season, that the assistant manager was hired to cover them. When in fact she was
absent from one of them.
2. Two vendors for the Highland Winter Market were admitted to the Aspen
Saturday Mazket through the CCLC screening process. Both of their products do
not meet the markets standards. Loredana uses ingredients from Italy and is put
together in Arvada. And then there is the sun glasses. Shae stated at the
screening meeting that these vendors needed to be admitted to the summer market
because she told them they could get into the summer market if they attended her
winter market.
3. Shae also stated at the screening meeting that there would not be any more
reallocation of space to the farmers from the craft vendors. We feel the farmers
are what attract people to the market and if we can bring a more diverse selection
of food to the mazket, it make for a stronger and better market, increase foot
traffic for the downtown merchants, and benefit the City as a whole from higher
sales tax revenues. We have a new western Colorado dairy that is interested in
bringing milk and artisan cheese to the market in the future. Also, we would like
to have an egg vendor. I planned on contacting our local FFA students and see if
they would be interested in putting a flock together of 200 + hens to sell eggs at
the market. But I have not pursued either of these two avenues because of what
was said by Shae at the meeting.
The farmers that I have spoken to about this issue are very unified that we need more
diverse farmer/food vendors at the market and were all disappointed in the direction the
assistant market manager is taking the market.
